Continuing with our Thanksgiving/ Holiday Diabetic-friendly side dishes series, how about this yummy roasted garlic mashed caulifower? Who needs mashed potatoes when you have this deliciousness!!


Roasted Garlic Mashed Cauliflower


Ingredients:


1 medium head cauliflower, chopped into florets

2 garlic cloves, roasted

2 tbsp unsalted butter

2 tbsp Greek yogurt (unsweetened)

Salt and pepper to taste


Instructions:

- Steam cauliflower until tender.

- Blend cauliflower with roasted garlic, butter, and Greek yogurt until smooth.

- Season with salt and pepper.
